The Roast Method

Roasted in small batches (<25lbs) in Oregon.

Roasting a blend with different densities requires precision. We use a carefully managed heat curve that allows the softer Brazilian beans to develop body without scorching, while giving the denser Mexican beans enough energy to release their citrus aromatics. The result is a 'Bold Medium' that captures the best of both worlds.

Brewing Recommendations

Focus: Versatility.

  • Water Temp: 200°F - 203°F (93°C - 95°C).Why: This range is hot enough to extract the maple sweetness from the Mexican beans but cool enough to keep the Brazilian chocolate notes smooth.
  • Ratio: 1:16 (Balanced).
  • Grind: Medium (Sea Salt texture).
  • Pro Tip: This roast blooms beautifully. Pour 50g of water first and wait 30 seconds to let the gas escape before finishing your brew.
