"The Composer" is an exercise in high-note harmony. We engineered this profile for vibrancy, combining the clean structure of Washed Mexican beans with the wild fruit notes of Natural Processed Ethiopian heirlooms. A base of Brazilian beans acts as the rhythm section, providing just enough body to ground the cup.

Housed in our signature clear-view packaging, you can see the light roast level that preserves delicate fruit enzymes, ensuring an exhilarating burst of citrus and berry with a tea-like finish.

The Roast Method

Roasted in small batches (<25lbs) in Oregon.

Light roasts leave nowhere to hide. We drop this roast immediately after the 'first crack' to preserve the unique terroir of the Ethiopian and Guatemalan beans. This requires precise airflow control to ensure the coffee is fully developed inside without caramelizing the sugars too deeply, keeping the cup bright and juicy.

Brewing Recommendations

Focus: Flat Bed & Immersion

  • Water Temp: 205°F - 208°F (Hotter).

Why: Light roasts are denser and harder to extract. Hotter water is necessary to pull out the fruity sweetness; cooler water will make it taste sour.

  • Recommended Method: AeroPress or Kalita Wave (Pour Over).

Why: These methods use a flat bed or immersion to ensure even saturation of the three different bean types.

  • Ratio: 1:16 to 1:17 (Slightly more water opens up the floral notes).

This exceptional blend draws from three premier coffee regions: Ethiopia's Guji, where smallholder farms use traditional shade-growing and intercropping; Guatemala's volcanic highlands (Antigua and Huehuetenango), known for their heritage farming practices; and Brazil's Cerrado estates, which contribute modern agricultural techniques. This combination offers a unique balance of traditional and contemporary farming approaches.
