Sunrise Blend is engineered for vibrancy. We combine the clean structure of Washed Mexican beans with the wild, juicy fruit notes of Natural Processed Ethiopian heirlooms. A base of Brazilian beans provides just enough body to ground the cup. Our small-batch light roast preserves the delicate fruit enzymes, delivering an exhilarating burst of citrus and berry with a tea-like finish.

The Roast Method

Roasted in small batches (<25lbs) in Oregon.

This is a technically demanding roast. The Natural Processed Ethiopian beans contain more sugar on the exterior and roast faster than the Washed Mexican beans. We use a specialized airflow profile to ensure the Mexican beans fully develop their sweetness without scorching the delicate Ethiopian sugars. This precision creates a cup that is bright, not sour.

Brewing Recommendations

Focus: Paper Filters are mandatory for this blend.

  • Water Temp: 205°F - 208°F (High Heat).

Why: High-grown Ethiopian and Mexican beans are dense. You need water just off the boil to penetrate the bean and extract the floral aromatics.

  • Recommended Method: Pour Over (V60 / Chemex).

Why: You must use a paper filter. The paper removes the sediment from the Natural Process beans and allows the clean, sparkling acidity to shine through.

  • Ratio: 1:16.

Impact & Sustainability

This blend represents three distinct farming traditions. We source from smallholders in Guji, Ethiopia, who use traditional intercropping; cooperatives in Chiapas, Mexico, that emphasize environmental stewardship; and established estates in Cerrado, Brazil, known for systematic precision. This diversity supports a global network of sustainable agriculture.
