The Roast Method

Roasted in small batches (<25lbs) in Oregon.

Roasting this coffee is a balancing act. We need enough heat development to caramelize the natural sugars into that rich Molasses and Date note, but we must drop the roast quickly to preserve the volatile Grapefruit acidity. Our conduction-roasting method ensures the dense Bourbon beans cook evenly from the inside out, avoiding any grassy under-developed flavors.

Brewing Recommendations

Focus: The Agitation Tip

  • Water Temp: 203°F - 205°F.
  • The "Active Bloom" Technique:The Goal: Maximize complexity by ensuring all grounds are wet instantly. The Move: During the bloom (first 30-45 seconds), pour 2x the weight of coffee in water and gently swirl or stir the slurry. The Result: This agitation ensures even saturation, marrying the bright citrus acidity (early extraction) with the deep molasses sweetness (late extraction) for a perfectly harmonious cup.
  • Ratio: 1:16.

Impact & Sustainability

Sourced from the La Concordia area of Chiapas, Mexico, this coffee is a direct link to the region's rich history and biodiversity. By purchasing this lot, we support local farmers who cultivate Heritage Varietals like Bourbon and Typica.

While these trees yield less than modern hybrids, they offer superior flavor, and their preservation is vital for the future of specialty coffee. Chiapas further ensures quality and sustainability through its strong tradition of cooperative farming, organic production, and innovative processing, balancing profitable, environmentally sound cultivation with the protection of crucial biosphere reserves.
