The Roast Method

Roasted in small batches (<25lbs) in Oregon.

Decaffeinated beans are more porous and turn dark quickly. We use a gentle, low-and-slow roast curve to ensure the beans develop their signature 'Mandheling' earthiness and chocolate notes without scorching. This precise control is why our decaf never tastes hollow or ashy.

Brewing Recommendations

Focus: Lower Temp for Decaf (Science).

  • Water Temp: 195°F - 198°F.Why: Decaf beans are more soluble than regular beans. Using slightly cooler water prevents extracting bitter compounds, preserving the smooth dark chocolate notes.
  • Ratio: 1:16 (Standard).
  • Grind: Medium-Fine.
  • Pro Tip: Decaf produces less crema than regular coffee, so don't worry if your espresso shot looks slightly different—the flavor is all there.

Mandhelingo coffee is cultivated in the highlands of Sulawesi, where unique processing and deeply rooted traditional farming methods define its distinctive Indonesian character. Grown by smallholder farms using time-honored practices in rich volcanic soils, these beans are celebrated for the full body and earthy complexity that premium Indonesian coffee is known for.
We use the Swiss Water Process to remove 99.9% of caffeine. Unlike cheaper methods that use chemical solvents like Methylene Chloride, our process uses only water, temperature, and time. It is safer for you, better for the environment, and keeps the bean's natural oils intact.
