"Guatemala" is a study in geology. Sourced from the nitrogen-rich volcanic soils of Huehuetenango and Antigua, these beans absorb intense mineral content, creating a dense cellular structure that holds complex flavor data.

We calibrate this roast to a strict Light-Medium level. This preserves the delicate volatile compounds of Red Apple and Black Tea, while developing the natural sugars into a rich Maple sweetness. Through our clear-view packaging, you can see the matte, cinnamon-toned finish of a roast designed to highlight the terroir, not mask it.

The Roast Method

Roasted in small batches (<25lbs) in Oregon.

Beans from Antigua and Huehuetenango are exceptionally dense due to the high altitude and volcanic soil. We use a robust heat profile initially to penetrate the dense bean structure, then taper off gently. This 'stretching' of the roast allows the sugars to caramelize into Maple and Chocolate notes without muting the delicate Apple/Plum acidity.

Brewing Recommendations

Focus: Avoiding Dryness.

  • Water Temp: 200°F - 204°F.
  • Ratio: 1:16.
  • Grind: Medium-Fine (Sea Salt texture).
  • Pro Tip: Guatemalan coffees have a characteristic 'Tea-Like' finish due to natural tannins. If your brew tastes dry or astringent, your water is too hot. Drop the temp to 200°F to get a sweet, clean finish like smooth black tea.

Huehuetenango is one of Guatemala's most rugged and remote regions. By sourcing from smallholders here, we support farmers who work in challenging terrain to produce some of the world's best coffee. The limestone-rich soil of Huehue and the volcanic valley of Antigua provide a unique terroir that cannot be replicated elsewhere.
