The Roast Method

Roasted in small batches (<25lbs) in Oregon.

Colombian beans from Huila are famous for their density and complex acidity. We use a roast profile with a 'gentle rise' in temperature. This ensures we fully develop the sugar structure (creating that chocolate/cane sugar base) without muting the delicate top notes of grape and plum that make this coffee special.

Brewing Recommendations

Focus: The "Cooling Evolution" (Simplified and made actionable).

  • Recommended Method: Pour Over (Paper Filter).Why: A paper filter removes oils to let the delicate fruit shine.
  • Water Temp: 200°F - 205°F.
  • Ratio: 1:16.
  • Pro Tip: The Cooling EvolutionDo not drink immediately! Great Colombian coffee changes as it cools. Wait until the cup reaches a warm 140°F. At this temperature, the sharp acidity softens, and the hidden notes of ripe cherry and plum suddenly pop. Trust us—patience pays off.
